I am guess about the birth year of Stephen Collett born c1693. If that is his birth year, then he would be to young to be a Huguenots Emigrate.
I have three of those ancestors.
1. Louis DuBois born 1627 (double line)
2. Jacques Cossart born 1639 (double line)
2. Nicholas Lehew born c1660
All born in Europe, removed first to various parts of Europe or England, done removed from France directly to US.
There were four major time periods of French Huguenots leaving France, the first group under Catherine de Medici--second half of 16th century, the second group under Richeliue regime, the third the largest amount due to the Revocation of the Edict of Nantes in 1685, the fourth aftermath of War of Austrian War 1748.
These facts can be found in any basic history book. I think they are missing a generation. It could be a distance Collett ancestor was a Huguenot leaving Frances for various part of Germany, Holland or England and then removing to present day US.
Or, Stephen could have been the orphaned child mentioned in the story if it holds true.

The French officials were in 1685 (Stephen if born c1693) were taking people out of their houses and killing them. The message I got he emigrated about 1700's. So I am to believe he hid out in France for 15 years and then boarded a ship and landed in US.
If "our" Collett are really French, then far more likely Stephen's parent or grandparents left France for England or other parts of Europe and then removed to US.

I believe that for most of our French & German Palatine ancestors, the United Kingdom (specifically England) was the likely jump off point. I think it was far easier for people to come to England and then board a ship there rather than find one in their home country.

The statement is "Stephen Collett came from France"
Has it been stated where in France he came from and where & when he arrived to present US?
What is the name of the ship ?
All the records for early Collett that I have seen, the people of this surname are coming from England.
I do not know if this is the same man or two different men,
An Abraham "A" Collett witness a will 14 Jun 1732 in Cecil Co. MD and the estate inventory filed in Frederick Co. VA on 6 Aug 1754 for Abraham Collet.
Another land deed entry for a Abraham Collett sold 550a of land in Frederick Co. VA on 7 Sep 1762 to Mountsa Byrd. Located on North River of Shenandoah River, granted to him by Lord Thomas Fairfax on 11th Nov 1756.
Could be a father and son relationship ?
